Curried Lentil Vegetable Stew


Curried Lentil Vegetable StewErika (MsAnthrope) 

1 medium onion, chopped2 medium carrots, diced
1 sweet potato, peeled and diced
1 medium red bell pepper, diced
4 large cloves garlic, minced
2 cups dry red lentils, rinsed and picked over
6 cups vegetable broth
1 tsp cumin
2 tsp curry powder
Salt and pepper to taste

Combine ingredients in slow cooker.  Cover and cook on low for 8 to 10 hours, or until lentils are very soft and stew is thick. Adjust seasoning to taste.
