Cous Cous ProvenÆ’al Michelle--MMmom's DH
1 tomato, diced
2 cloves garlic, chopped
1 tbsp. butter
1 tbsp. extra virgin olive oil
½ cup couscous
½ cup water, boiling
a pinch of dried, chopped basil (to taste)
a pinch of herbes de provence (to taste)
salt (to taste)
black pepper (to taste)
Put tomato, garlic, olive oil, and butter into a sauce pan and cook over medium heat until most of the water leaves the mixture.
Add ½ cup couscous. Quickly add basil, herbes de provence, salt, and black pepper to taste. Quickly stir together, add just under ½ cup boiling water, and then remove from heat. Cover and let sit for 5 minutes.
After 5 minutes, fluff couscous with a fork and serve.
