Hershey's "Perfectly Chocolate" Chocolate CakeKatie (Katiedid)
2 c sugar
1 3/4 c flour
3/4 c Hershey's cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 c milk
1/2 c vegetable oil
2 tsp vanilla
1 c boiling water
Heat
oven to 350 F. Grease and flour two 9-in. round baking pans. Combine
dry ingredients in large bowl. Add eggs, milk, oil and vanilla; beat on
medium speed 2 minutes. Stir in boiling water (batter will be thin).
Pour into pans. Bake 30 to 35 minutes or until wooden pick inserted
comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool
completely. Frost with "Perfectly Chocolate" Chocolate Frosting. Yield:
10 to 12 servings For cupcakes: Line muffin cups with paper bake cups.
Fill cups 2/3 full with batter. Bake at 350 F for 22-25 minutes. Cool;
frost. About 30 cupcakes

Double-Chocolate Banana Bread

1 cup sugar
2 eggs
1/3 cup vegetable oil
1 1/4 cups mashed ripe banana (about 3)
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa
1 teaspoon baking soda
1 cup semisweet chocolate chips
1. Heat oven to 350 degrees. Spray bottom of 8x4-inch loaf pan with cooking spray.
2. Beat sugar, eggs and oil in large bowl at medium speed until combined. Beat in banana and vanilla at low speed. Combine flour, cocoa and baking soda in medium bowl; beat into banana mixture at low speed just until combined. Stir in chocolate chips.
3. Spoon batter into pan. Bake 60 to 70 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan; cool completely on wire rack.
