PASTA WITH SPINACH PESTO

1 lb pasta (spaghetti, penne, fettuccine or linguini)Coarse salt and ground pepper1 10-oz pkg of frozen spinach, thawed and squeezed dry1/3 cup grated parmesan cheese (plus more for serving)2 tablespoons toasted pine nuts, plus more for serving1 garlic clove1 teaspoon grated zest plus 2 tablespoons lemon juice ¼ cup olive oil
Optional, 4 oz soft goat cheese
Cook the pasta in a large pot of boiling, salted water until al dente (I usually cook it 1 minute less than the package directs).  Reserve 1 cup of the pasta cooking water.  Drain the pasta and return it to the pot.
While the pasta is cooking, place the spinach, parmesan, 2 tablespoons pine nuts, garlic, lemon zest and juice in a food processor or blender.  Process until a paste forms.  With the motor running, add oil and ¼ cup cold water, and process until smooth and creamy, about 1 minute.  Season with salt and pepper.  Add to the pasta and toss, adding reserved pasta water a little at a time until the sauce is thinned slightly and coats the pasta. 
If desired, stir in the goat cheese when you add the pesto to the pasta.
Serve, sprinkled with additional Parmesan and nuts.

Ingredients

  • 1 (8 ounce) package farfalle (bow tie) pasta
  • 1 pound ground beef
  • 1 small onion, chopped (optional)
  • 1 (28 ounce) jar pasta sauce
  • 8 ounces mozzarella cheese, cut into 1/2 inch cubes
  • 1/4 cup grated Parmesan cheese

Directions

Preheat oven to 400 degrees F (200 degrees C).
Fill a large pot with lightly salted water, bring to a rolling boil over high heat. Stir in the bow tie pasta and return to a boil. Boil pasta, stirring occasionally, until cooked through but still firm to the bite, about 12 minutes. Drain well.
Cook and stir ground beef and onion in a large skillet until beef is no longer pink, about 5 minutes. Drain fat. Stir in pasta sauce and bring to a boil. Reduce heat to simmer.
Stir cooked pasta and half of the mozzarella cheese into the sauce; toss to combine. Transfer to a 2-quart baking dish. Top with remaining mozzarella and Parmesan cheese.
Bake in preheated oven until lightly browned and bubbly, 15 to 20 minutes.

Teriyaki Penne

8 ounces dried whole-grain penne
1/2 teaspoon grated fresh ginger
1 clove garlic, minced
1 tablespoon extra-virgin olive oil
3 cups packaged shredded broccoli (broccoli slaw mix) 
1/4 cup teriyaki sauce
1/4 cup thinly sliced green onions
1/8 cup sesame oil
1/8 cup slivered almonds

Cook pasta according to package directions; drain. Return pasta to saucepan. Meanwhile, in a large skillet cook ginger and garlic in hot oil for 15 seconds. Stir in the shredded broccoli, frozen chicken, sesame oil, almonds, and teriyaki sauce. Cook and stir about 5 minutes or until broccoli is crisp-tender. To serve, toss broccoli mixture with hot pasta; add green onions.

WHY THIS RECIPE WORKS:


Given that good fresh tomatoes are a rare commodity and that we wanted a tomato sauce recipe that home cooks could use year-round, we decided to use canned tomatoes. After conducting a number of tests, we determined the crucial ingredients to be garlic, fresh basil, olive oil, salt, and sugar. We discovered that a garlic puree, diluted with water and sautéed briefly in olive oil, provided a mild, even garlic flavor while greatly reducing the possibility of overcooking the garlic.


If you use whole canned tomatoes, avoid those packed in sauce or puree, which results in a dull, relatively flavorless sauce without the interplay of sweetness and acidity. If you choose Muir Glen Diced Tomatoes instead, use the can's entire contents, without discarding any liquid. The pasta and sauce quantities can be doubled, but you will have to simmer the sauce for an extra five or six minutes to thicken it. If you do not have a garlic press, mince the garlic very fine and sauté it for one minute rather than two. Note that the salt in this recipe is added in two batches; if you are using the sauce for something other than pasta, simply salt to taste rather than adding the second quantity of salt.



INGREDIENTS

  •    1 (28-ounce) can diced tomatoes or whole tomatoes (not packed in puree or sauce)
  • medium cloves  garlic , peeled
  • tablespoons  extra-virgin olive oil
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup vodka
  • cup heavy cream
  • Ground black pepper
  • tablespoons chopped fresh basil (about 8 leaves)
  • 1/4 teaspoon granulated sugar
  • 1 1/2 teaspoons table salt
  • pound pasta

INSTRUCTIONS

  1. If using diced tomatoes, go to step 2. If using whole tomatoes, drain and reserve liquid. Dice tomatoes either by hand or in workbowl of food processor fitted with metal blade (three or four 1/2-second pulses). Tomatoes should be coarse, with 1/4-inch pieces visible. If necessary, add enough reserved liquid to tomatoes to total 2 cups.
  2.  Process garlic through garlic press into small bowl; stir in 1 teaspoon water. Heat 2 tablespoons oil and garlic and red pepper flakes in 10-inch sauté pan over medium heat until fragrant but not brown, about 2 minutes. Stir in tomatoes; simmer 5 minutes. Add vodka and simmer 5 minutes longer. Stir in cream, ground black pepper to taste, basil, sugar, and 1/2 teaspoon salt. Transfer sauce to workbowl of food processor fitted with a steel blade; pulse to a coarse puree. Return sauce to pan; simmer over medium heat to thicken, 2 to 3 minutes.
  3. Meanwhile, cook pasta until al dente in large pot of boiling, salted water. Reserve 1/4 cup cooking water; drain pasta, and transfer it back to cooking pot. Mix in reserved cooking water, sauce, and remaining oil and salt; cook together over medium heat for 1 minutes, stirring constantly, and serve immediately.

Ingredients: 

15 jumbo pasta shells
1lb ground beef
2 (10 ounce) can enchilada sauce
½ teaspoon dried minced onion
¼ teaspoon dried oregano
¼ teaspoon dried basil
¼ teaspoon ground cumin
½ cup refried beans
1 cup shredded Colby jack cheese
Step 1: Pre-heat the oven to 350 degrees. Cook pasta shells according to package directions. Drain and set aside. In a large skillet over medium heat brown ground turkey until no longer pink. Drain any excess fat. Stir in onion, oregano, basil, and cumin. Stir in 1 can of the enchilada sauce. Stir in refried beans. Set aside.
Step 2: Fill each cooked pasta shell with the turkey/refried bean mixture. Coat an 11 x 7 inch baking dish with nonstick cooking spray and pour half of the remaining can of enchilada sauce evenly over the bottom. Place each shell into the bottom of the dish. Pour the remaining enchilada sauce over the tops of the shells.
Step 3: Cover and bake at 350 degrees for 25 minutes. During the last few minutes of cooking, uncover and sprinkle the tops of the shells with Colby-jack cheese. Bake until the cheese has melted.

Creamy Tagliatelle with Beef, Mushrooms & Asparagus

Creamy Tagliatelle with Beef, Mushrooms & Asparagus

    1/2 lb thinly sliced beef
    16 oz tagliatelle pasta noodles
    2 cloves garlic minced
    1/2 red onion diced
    8 oz shiitake mushrooms sliced
    8 stalks of asparagus, ends trimmed, chopped into bite size pieces
    1/2 cup white wine
    2-3 tbsp butter
    1-2 tbsp olive oil
    2 heaping tbsp flour
    2-3 cups whole milk or cream
    salt and pepper to season
    1/2 cup parmesan cheese
    chopped fresh parsley

In a large pan, coat with tbsp oil. Add beef and cook for a minute or two on each side. Set beef aside. Add more butter and saute onion, garlic, and mushrooms over medium heat. Push to the side  of pan once softened. Add more oil or butter and increase heat. Quickly saute asparagus spears and then take out of pan and combine with beef. Add white wine to garlic, mushroom, and onion mixture. Wait until the liquid is almost completely absorbed and mix in the flour. Pour in the milk and season with salt and pepper. Whisk until a creamy sauce is created. Add in beef, asparagus, and parmesan.

Meanwhile, heat a large pot of water with salt. When boiling, add pasta and cook until al dente.

Serve creamy sauce over egg noodles.

Wine pairing: Dolcetto d’Alba from Piedmont, Italy. A value oriented red varietal with earthy notes complementing mushrooms and beef.

ingredients:
4 rashers streaky bacon
1 onion, chopped
2 cloves garlic, crushed
250g ground beef
salt and freshly ground black pepper to season
120g mushrooms, chopped
¼ cup sun dried tomatoes, chopped
15g butter
2 tablespoons olive oil
3 tablespoons flour
375mls chicken stock
1/3 cup cream
200g pasta
½ cup frozen peas
½ cup grated Parmesan

method:
add the bacon to a frying pan over a medium heat and cook until crisp
remove from the pan and chop
sauté the onions and the garlic until soft
add the beef and brown
season and add the mushrooms and cook until soft
add the sundried tomatoes and the bacon and leave to simmer
in a separate saucepan melt the butter in the with the olive oil over a low heat
add the flour and cook for at least 30 seconds
add the stock while whisking the whole time
whisk in the cream
add 1 cup of the sauce to the meat and leave to simmer for 20 minutes while you bring your pasta water to the boil
cook the pasta as per the package instructions
add the peas and heat through
add more sauce to your liking
add the Parmesan and allow the cheese to melt
loosen the sauce with the pasta water before tossing in your cooked pasta

Serving Size: 6

    12 ounces bow tie pasta -- uncooked
    6 cloves to 8 garlic -- minced
    1/4 cup olive oil
    2/3 cup fresh Key lime juice*
    1/2 cup dry sherry
    2 cups green onions -- sliced
    1 pound plum tomatoes -- chopped
    2 15 oz cans black beans -- rinsed & drained
    1 teaspoon salt
    1/2 teaspoon freshly ground pepper
    1 1/2 teaspoons freshly grated Key lime rind
    1/2 cup fresh Italian parsley -- chopped

Cook pasta according to package directions.
Drain and keep warm.
Saute garlic in oil in a skillet until tender.
Add lime juice and sherry; cook over high heat for 5 minutes or until mixture is reduced to 1/4 cup.
Add green onions and chopped tomato; cook over medium heat, stirring ccasionally, 5 to 8 minutes.
Stir in black beans and next 3 ingredients; pour over pasta, tossing to coat.
Sprinkle with parsley and serve immediately.

Lentil Spaghetti Bolognese

Lentil Spaghetti Bolognese

Ingredients:

4 Tbsp olive oil
1 onion, diced
4 cloves garlic, minced or chopped fine
2 carrots, grated (secret ingredient)
1/2 teaspoon salt
28 oz can, or 2 lb fresh tomato, chopped small or pureed in a blender (800 g)
2 oz sundried tomato, chopped roughly or added to the blender mix (50g)
2 Tbsp of oil from the sundried tomato
1/4 lb, or 1 cup mushrooms, chopped or sliced or diced (125 g)
1 zucchini, grated
1 tsp dried oregano
1 bay leaf
2 cups fresh basil leaf, roughly chopped (20 g)
2 cups cooked lentils (400g)

Directions:

Cook the garlic, salt, onion and carrot in the olive oil until they are very soft.

Add all the other ingredients and simmer with the lid off for at least 25 minutes until you are happy with the consistency.

Adjust salt and pepper to taste.

Serve on spaghetti or your favorite pasta shape after removing the bay leaf.

Savvy Veg Recipe Notes:
One of our recipe testers said that the herbs tasted very strong in the recipe. She suggested cutting back on the basil and oregano. I think it depends on how you measure the basil (should be before your chop), and how much you like oregano (reduce to 1/2 tsp if you're not a big fan.

INGREDIENTS
Coarse salt and ground pepper
1 bunch broccoli, cut into 1-inch pieces (about 4 cups)
10 ounces short pasta, such as fusilli
5 teaspoons extra-virgin olive oil
1/2 ounce Parmesan, finely grated (1/4 cup), plus more for serving (optional)
1 teaspoon finely grated lemon zest, plus 1 tablespoon lemon juice
1/2 cup packed fresh parsley leaves
1/2 small garlic clove
1 can (15.5 ounces) cannellini beans, rinsed and drained

DIRECTIONS
In a large pot of boiling salted water, cook broccoli until tender and bright green, about 4 minutes. With a slotted spoon, transfer broccoli to a food processor. Return water to a boil and cook pasta according to package instructions. Reserve 2 cups pasta water; drain pasta and return to pot.
To food processor, add oil, Parmesan, lemon zest and juice, parsley, and garlic. Puree until smooth, about 2 minutes, scraping down side as needed. Transfer pesto to pot with pasta. Stir to coat, adding enough reserved pasta water to make a creamy sauce. Stir in beans and heat over medium until warmed through.
Season with salt and pepper. To serve, sprinkle with Parmesan, if desired.

Turkey Meatballs:
3 slices white bread, crust removed and torn into small shreds
1/4 cup whole milk
3/4 pound ground turkey (recommended: 93 percent lean dark meat)
1/2 pound Italian turkey sausage, casing removed
1/4 cup grated Parmesan, plus more for serving
2 tablespoons finely chopped parsley leaves
2 cloves garlic, finely chopped
Salt and freshly ground black pepper
Vegetable oil, for pan-frying
Spicy Tomato Sauce:
2 tablespoons olive oil
3 cloves garlic, chopped
1 teaspoons red pepper flakes
1 (28-ounce) can crushed tomatoes, in thick puree
1 teaspoon dried basil
1 teaspoon sugar
Salt and freshly ground black pepper
1 pound spaghetti, cooked al dente

For the meatballs: Preheat vegetable oil over medium heat. In a medium bowl, soak the torn white bread with the milk. Let soak for 1minute then remove the bread and squeeze out the excess milk. In another bowl, add ground turkey, turkey sausage, Parmesan, parsley, garlic and salt and pepper. Add milk soaked bread and mix all ingredients gently. Form meat mixture into 1 1/2-inch meatballs. In a large heavy skillet, add meatballs and cook until golden brown on all sides. Remove the meatballs to a paper towel lined platter. Repeat in batches until there are no remaining meatballs. Add meatballs to the cooked sauce and add salt and pepper, to taste. Cook for 10 minutes. For the sauce: Heat olive oil in a large heavy bottomed saucepan. Add garlic and red pepper flakes and cook until fragrant. Add crushed tomatoes and let simmer for 15 minutes. Add dried basil, sugar, salt and pepper. Toss spaghetti and sauce with meatballs in a large serving bowl. Top with grated Parmesan cheese.

Amy’s Notes: I use 1.25 pounds of ground turkey, leave out the sausage and double the sauce!

Ingredients

    3 cloves garlic, crushed and peeled
    2 medium carrots, cut into 2-inch pieces
    10 ounces white mushrooms, large ones cut in half
    1 large onion, cut into 2-inch pieces
    1 pound 90%-lean ground beef
    2 teaspoons dried thyme
    3/4 teaspoon salt
    1/4 teaspoon freshly ground pepper
    2 cups water
    1 14-ounce can reduced-sodium beef broth, divided
    8 ounces whole-wheat elbow noodles, (2 cups)
    2 tablespoons Worcestershire sauce
    2 tablespoons all-purpose flour
    1/2 cup reduced-fat sour cream
    1 tablespoon chopped fresh parsley, or chives for garnish
 

  Fit a food processor with the steel blade attachment. With the motor running, drop garlic through the feed tube and process until minced, then add carrots and mushrooms and process until finely chopped. Turn it off, add onion, and pulse until roughly chopped.

    Cook beef in a large straight-sided skillet or Dutch oven over medium-high heat, breaking it up with a wooden spoon, until no longer pink, 3 to 5 minutes. Stir in the chopped vegetables, thyme, salt and pepper and cook, stirring often, until the vegetables start to soften and the mushrooms release their juices, 5 to 7 minutes.

    Stir in water, 1 1/2 cups broth, noodles and Worcestershire sauce; bring to a boil. Cover, reduce heat to medium and cook, stirring occasionally, until the pasta is tender, 8 to 10 minutes.

    Whisk flour with the remaining 1/4 cup broth in a small bowl until smooth; stir into the hamburger mixture. Stir in the sour cream. Simmer, stirring often, until the sauce is thickened, about 2 minutes. Serve sprinkled with parsley (or chives), if desired.

This easy one-pan meal is full of flavor, but kept light with lean ground beef, hearty mushrooms and calcium and fiber enriched pasta. A touch of paprika gives a rosy color to the lightly creamy sauce made with reduced fat sour cream and 1/3 less fat cream cheese.

Ingredients
    •    1 pound 90 percent lean ground beef
    •    Kosher salt and freshly ground black pepper
    •    1 (10-ounce) package white mushrooms, halved or quartered, if large
    •    1 tablespoon extra-virgin olive oil
    •    1 small onion, chopped
    •    1 carrot, peeled and cut into 1/4-inch dice, 1 cup
    •    3 cloves garlic, finely chopped
    •    1/2 teaspoon paprika
    •    1 tablespoon tomato paste
    •    1 (15-ounce) can low-sodium beef broth
    •    1 1/2 cups water
    •    1 tablespoon Worcestershire sauce
    •    2 cups (6-ounces) calcium and fiber enriched penne pasta,
    •    1/4 cup (2 ounces) 1/3 less fat cream cheese, room temperature
    •    1/4 cup reduced-fat sour cream
    •    2 tablespoons chopped fresh parsley leaves
    •    2 tablespoons chopped fresh chives

Heat a large nonstick skillet over medium-high heat. Add the beef, season to taste with salt and pepper and cook, breaking into small pieces with a wooden spoon, until well browned, about 5 minutes. Transfer the meat to a bowl, leaving behind any drippings; reduce the heat to medium.

To the same skillet, add the mushrooms, season with salt and cook until golden brown, 8 to 10 minutes. Add the cooked mushrooms to the bowl with the beef. Add the oil, onion, carrot, garlic, and paprika to the skillet and continue to cook until the carrots are soft and the onion is lightly browned, about 10 minutes.

Stir in the tomato paste and cook until the tomato paste has toasted and is evenly coating the vegetables, 2 to 3 minutes. Add the broth, water, and the Worcestershire sauce to the skillet. Bring to a simmer and stir in the pasta. Cover and cook according to package directions until the noodles are just al dente. Uncover, stir in the reserved beef and mushrooms until heated through. Remove from heat and stir in the cream cheese, sour cream, chopped parsley, chopped chives, and salt and pepper, to taste, until the cream cheese melts and the sauce is creamy. Divide among 6 bowls. Serve.

Creamy Spaghetti and Beans

Ingredients

    5 to 6 cups chicken stock
    2 tablespoons extra-virgin olive oil
    2 tablespoons butter
    1/4 pound chunk pancetta chopped into small dice
    4 cloves garlic, chopped
    1 pound spaghetti
    1 medium onion, chopped
    2 carrots, cut into a small dice
    1 fresh bay leaf
    5 to 6 sprigs fresh thyme
    1 (15-ounce) can Roman beans or small white beans (recommended: Goya brand)
    Salt and freshly ground black pepper
    1 cup dry white wine, eyeball it
    1 cup grated Parmigiano-Reggiano
    A generous handful flat-leaf parsley, finely chopped

Directions

Place the stock in a sauce pot and warm it over medium heat then reduce to simmer.

Heat the extra-virgin olive oil and the butter in a large, deep skillet over medium to medium-high heat. Add the pancetta to brown slightly. Next add the garlic and spaghetti and toast the noodles lightly, 3 to 4 minutes. Add onions and carrots, bay leaf and thyme, and season with salt and pepper. Soften veggies a bit, 5 minutes. Add wine and allow it to be completely absorbed. Add beans then add a few ladles of stock and stir the pasta. Keep adding stock a few ladles at a time allowing liquids to be mostly absorbed before adding more, as if you were preparing a risotto. When liquids are absorbed and spaghetti is cooked to al dente, 12-15 minutes, stir in cheese. Adjust salt and pepper. Turn off heat and stir another minute. Remove the bay leaf and thyme stems. Serve in shallow bowls and garnish with lots of parsley.

2-3 cups water (2 if using the rice)
2 cups sauce
seasonings and add in of your choice

Instructions: Brown meat in a large non-stick skillet. Add water and pasta. Cover and cook until pasta is soft and most of water is absorbed. Add sauce and season as desired. heat through. Add your add-ins and topping. Cover and let topping get hot. Serve. If using tuna skip browning step and cook rice or pasta and add tuna after the sauce.

Ingredients

    2 cups boneless skinless chicken breast, cooked and shredded
    1 (14 ounce) can artichoke hearts, chopped
    1/2 cup chopped sun-dried tomatoes
    1 (8 ounce) package KRAFT Shredded Mozzarella Cheese with a Touch of PHILADELPHIA, divided
    1/2 cup KRAFT Grated Parmesan Cheese
    2 (8 ounce) packages PHILADELPHIA Cream Cheese, softened
    1 cup milk
    1/2 teaspoon garlic powder
    1/4 cup basil, chopped
    12 lasagna noodles, cooked

Directions

    Heat oven to 350 degrees F.

    Combine chicken, artichokes, tomatoes, 1 cup mozzarella and Parmesan. Beat cream cheese, milk, and garlic powder with mixer until well blended; stir in 2 tablespoons basil. Mix half with the chicken mixture.

    Spread half of the remaining cream cheese sauce onto bottom of 13x9-inch baking dish; cover with 3 noodles and 1/3 of the chicken mixture. Repeat layers of noodles and chicken mixture twice. Top with remaining cheese sauce and mozzarella; cover.

    Bake 25 min. or until heated through. Sprinkle with remaining basil. Let stand 5 min. before cutting to serve.

Serves 8 but I think Americans would serve this to 4 to 6

When I first realized that this “baked ziti” lacked a tomato sauce, I had my doubts. But then Alex said “it would be like Italian mac and cheese!” and then, predictably, it had my full attention. Although the original dish didn’t yield anything so sauced and cheesy as the mac-and-cheese we know, I’ve upped the sauce, cheese and seasoning for a baked pasta that is more lush, but surprisingly un-heavy. This is still a subtle baked pasta.

There’s a lot of room for tweaking here: If you’re certain you won’t be happy without a veritable oozing of cheese, you could tear up some fresh mozzarella and toss it in with the dish before you baked it. If you cannot bring yourself to eat this unless it contains one form of vegetable matter, I imagine a bit of cooked spinach, steamed broccoli bits or even eensy cubes of roasted carrot and parsnip would work in here.

For the meatballs:
1/4 cup milk
1 slice good white bread trimmed of its crust
1 pound ground pork (or beef, or lamb, or a mix of the three)
1 teaspoon chopped garlic
2 tablespoons chopped parsley
1/3 cup freshly grated parmigiano-reggiano (Parmesan)
1 egg
Salt
Black pepper in a grinder
1 cup flour, spread on a plate
Vegetable oil for frying

For the bèchamel:
4 1/2 cups milk
6 tablespoons butter
5 tablespoons flour
1/8 teaspoon grated nutmeg
1/2 teaspoon salt
1/4 teaspoon ground black pepper

To finish:
1 pound rigatoni
3/4 cup freshly grated parmigiano-reggiano
1 tablespoon butter
1/4 cup milk

Make the meatballs: Heat the milk, but don’t let it simmer. Tear pieces of the white bread into it and let it soak for 5 minutes, before picking it up with your hand, squeezing it of excess milk and putting it in a large mixing bowl.
Add the pork, garlic, parsley, grated cheese, egg, salt, and pepper. Combine all the ingredients with a fork until they are evenly mixed (or “amalgamated”, as Hazan so charmingly says).

Pinch off a small lump of meat, about the size of a raspberry and roll the lump into a ball in the palm of your hands. (Hazan says if you are good with your hands, you can try making 3 balls at a time. It turns out, I am not.) When all the meatballs have been shaped (a process that took less time than I had expected, just the same), roll them in the flour, 15 to 20 at a time. Place the floured meatballs in a strainer and shake it smartly to dispose of excess flour.

Put enough vegetable oil in a skillet to rise 1/4-inch up the sides of the pan and turn on the heat to medium high. When the oil is hot, put as many meatballs in the skillet as will fit without overcrowding. Brown them until they form a nice crust all around. When one batch is done, transfer it with a slotted spoon to a platter covered with paper towels to drain and do the next batch until all are done.

Make the bèchamel: Heat the milk over low heat in a saucepan until it forms a ring of pearly bubbles, but do not let it break into a boil. In a larger saucepan, melt the butter over low heat, add the flour and stirring constantly with a wooden spoon or flat whisk until combined. Add 2 tablespoons of milk at a time to the flour and butter mixture, stirring steadily and thoroughly, then repeat through 8 additions. At this point, you can add the milk in 1/2 cup increments, stirring constantly to keep it smooth. Add the salt, pepper and nutmeg and stir the sauce until it thickens.

Assemble the dish: Cook the rigatoni in a pot of well salted water. Drain when still al dente, and combine immediately in bowl with two-thirds of the bèchamel, half the grated cheese, and all the meatballs.

Preheat the oven to 400°F. Heavily butter a 9×13 baking dish. (Original recipe calls for a 12-inch springform, which I am sure would be lovely but is not the commonest U.S. cake pan.) Spread the rigatoni and meatball mixture in the pan, leveling it off with a spatula. Pour the milk over the dish, the spread the rest of bèchamel on top, and sprinkle with the remaining grated cheese.

Place in the uppermost level of the preheated oven. Bake for 15 to 20 minutes until a golden brown crust forms on top.

Checca Sauce


Checca Sauce

12 oz. cherry tomatoes (I use whatever good tomatoes I have, up to a pound)
3 scallions, chopped
8 leaves fresh basil
1 garlic clove, peeled
1 oz piece of parmesan, chopped into small pieces
3 tablespoons olive oil
salt
pepper
4 oz fresh mozzarella, cut into 1/2 pieces (I frequently use regular mozz, and it's fine)

Combine all ingredients, except mozzarella in a food processor, and process until the consistency of a salsa. Add in mozzarella. Toss with your favorite pasta.
ETA: I should add that raw garlic = some serious garlic breath. But it's worth it!

SPINACH-ARTICHOKE CHEESY TORTELLINI
(snoelles - Rachael Ray's Express Lane Meals)

1 (10 ounce) box frozen spinach , thawed and drained
2 tablespoons olive oil
1 tablespoon butter
3 garlic cloves, chopped
1 small onion, grated
2 tablespoons flour
1 cup chicken broth
1 cup heavy cream
1/8 teaspoon nutmeg
1 (14 ounce) can water-packed artichoke hearts , drained and chopped
1 cup parmesan cheese or romano cheese
1 lb cheese tortellini

1. Heat a deep skillet over medium heat with the oil and butter.
2. When butter melts, add garlic and grated onion. Saute for 5 minutes. 3. Sprinkle the flour into the skillet and cook for 1 minute.
4. Whisk in the broth, then the cream and bring to a bubble.
5. Season the sauce with nutmeg and reduce heat to low.
6. Separate spinach into pieces as you add it to the sauce.
7. Stir in the artichokes and cheese and season to taste with salt and pepper.
8. Cook the tortellini in salted boiling water according to package directions, about 7 minutes.
9. Drain and toss with the spinach artichoke sauce.
10. Serve immediately with additional grated cheese and diced tomatoes, if desired.
*Amy's notes: I added a cup and a half of diced cooked chicken and a cup of skim milk before combining the pasta with the sauce.

Creamy Spaghetti and Beans

Creamy Spaghetti and Beans

Ingredients

    5 to 6 cups chicken stock
    2 tablespoons extra-virgin olive oil
    2 tablespoons butter
    1/4 pound chunk pancetta chopped into small dice
    4 cloves garlic, chopped
    1 pound spaghetti
    1 medium onion, chopped
    2 carrots, cut into a small dice
    1 fresh bay leaf
    5 to 6 sprigs fresh thyme
    1 (15-ounce) can Roman beans or small white beans (recommended: Goya brand)
    Salt and freshly ground black pepper
    1 cup dry white wine, eyeball it
    1 cup grated Parmigiano-Reggiano
    A generous handful flat-leaf parsley, finely chopped

Directions

Place the stock in a sauce pot and warm it over medium heat then reduce to simmer.

Heat the extra-virgin olive oil and the butter in a large, deep skillet over medium to medium-high heat. Add the pancetta to brown slightly. Next add the garlic and spaghetti and toast the noodles lightly, 3 to 4 minutes. Add onions and carrots, bay leaf and thyme, and season with salt and pepper. Soften veggies a bit, 5 minutes. Add wine and allow it to be completely absorbed. Add beans then add a few ladles of stock and stir the pasta. Keep adding stock a few ladles at a time allowing liquids to be mostly absorbed before adding more, as if you were preparing a risotto. When liquids are absorbed and spaghetti is cooked to al dente, 12-15 minutes, stir in cheese. Adjust salt and pepper. Turn off heat and stir another minute. Remove the bay leaf and thyme stems. Serve in shallow bowls and garnish with lots of parsley.
